Six things are scored: whether the pizza has what the ticket asked for, whether the cheese went on before the toppings, how evenly the toppings are spread, how close the bake was to the green band, whether the slice count matches, and how much patience the customer had left. Burning the pizza is the single most expensive mistake — it zeroes the bake score and cuts the rest of the payment as well.

After the bake, never before. Basil and chilli are delicate: if they are on the pizza when it goes into the oven they burn, stop counting toward the ticket, and drag the order score down. From day nine a finishing step appears after you pull the pizza out — that is where herbs go.

You lose the payment and your reputation drops by a full point. Reputation only matters directly on the last three days, which are judged on it as well as on takings, but it is also the clearest signal that you are trying to make every pizza perfect instead of keeping the queue moving.

They are permanent and apply to every night from then on. Comfy seats add patience to every customer, the stone deck widens the window where a bake counts as perfect, the prep hand spaces arrivals further apart so the queue is less crowded, and the shop sign raises every payment by a percentage. They are bought with takings, so a failed night still contributes.
